
OK today’s blog is all about cooking
I would call myself a good cook. I’m not excellent by any means, but I know how to cook healthy home cook meals and I do it pretty much 7 days a week. I tend to stick to chicken or fish rather than beef or pork. I’m not a big red meat fan, although the occasional all beef hot dog or hamburger does make it into my diet over the summer because I love having a back yard BBQ or a back yard fire and roast some wieners
But other than that I just don’t both with beef. I know your all thinking what about a steak? well I grew up with a dad who loved steak so we ate steak probably about 3 times a week so after about 21 years of this I’m a little staked out. I occasionally have pork or beef when I got for dinner at my mom’s but it’s usually pork tender loin or roast beef.
When I grocery shop I usually only buy boneless skinless chicken breasts by the big box
gotta buy in bulk so you go lots. Or I’ll pick up some fish, shrimp or prawns depending what is on sale. I usually only buy fish just before I’m going to use it like yesterday I stopped at the grocery store to buy the fish I wanted for dinner. That way I can buy fresh and it won’t magically sit in my freezer and go bad like last time
Other than that I will buy a shrimp ring when they go on sale cause it’s an easy way to get cheep shrimp that doesn’t have the shells on the outside. I kinda hate having to take the shells off, it grouses me out.
Other than that I will buy beans (whole white and red kidney beans, black beans or pinto beans) that come just as beans with no sauce and make sure to rinse them really really well cause the oil/water stuff they come in is high in sodium. Beans make an excellent source of protein and fibber if I’m feeling lazy I’ll put them on a salad or add them in instead of chicken or prawns in a stir fry. I’ll have the occasional egg, usually hard boiled or scrambled with lots of veggies in it and that’s about it for the protein portion of my diet.
I buy lots and lots of produce from a local fresh fruit and veggies market. They tend to be cheaper and have a better selection of different kinds of veggies. My staples are
Veggies: Always buy
- broccoli, cauliflower, lettuce, tomatoes, cucumber, purple cabbage, bell peppers (usually red, orange and yellow, I find that the bag of prepackaged peppers that comes at the grocery store is usually the cheapest way to buy them)
Buy depending on price:
- zucchini, asparagus, yams, radishes, mushrooms
Fruit: Always buy
- apples, bananas, oranges
buy depending on price:
- strawberries, kiwis, raspberries, grapes, pears, mangos, pineapple
One of my favourite deserts is just a fresh fruit salad that I make myself. This is part of the reason that I love summer so much cause there are sooo many fresh fruits available for cheap
Last night I made what Jlo calls the fish dish
It’s one of my favourite things that she makes in the summer and well I decided it’s about time I learn how too. You see Jlo grew up in the oakanogan which means she grew up with a family that did a lot of fishing and drank a lot of wine so she is a very good cook and is excellent at cooking fish. Me on the other hand grew up in a family where my dad would so not eat fish no matter how much you tried to cover it will tartar sauce or anything else, so I have no idea how to cook fish.
The fish dish is really really easy to make and only takes about 15 minutes to make other than the time to cook your rice.
Ingredients:
2-4 white fish fillets, boneless n skinless
3-4 medium sized tomatoes
2 medium sized bell peppers
1 onion
celery
2 tlbs fresh chopped basil (if none is available dried is fine)
1 tlbs chopped cilantro (optional)
black pepper
brown rice
OK so you got all the ingredients here’s how you do it
First thing first take care of the thing that takes the longest to cook, the rice. Measure out about 1 cup brown rice into a medium sized pot. Add 4 cups water and a tiny few drops of olive oil into the pot. Place on a medium sized burned on a medium to high heat, put the lid on and leave to cook. You’ll know it’s done when there is no water left in the bottom of the pot. It’s a good idea to stir occasionally. Make sure to check often so it doesn’t burn on the bottom.
Defrost your fish fillets, if you bought them fresh and never frozen then skip this step cause they are already defrosted. The fish you want to get is a white rather tasteless fish, something simple. I usually use Basa, but any white fish will do. I usually look for what ever is on sale at the time. Halibut is amazing but really expensive. Last night I used Tilapia fish cause it was on sale

Finely chop up the tomatoes, onion, peppers and about 2-3 stocks of celery (2-3 pieces). You can also add any other veggies you want as long as you finely chop them too. I sometimes add broccoli, mushrooms, asparagus, ect. Place all chopped veggies into a large skillet or frying pan preferable non stick. Sprinkle in 2 tablespoons of fresh chopped basil and I tablespoon chopped cilantro (cilantro is optional cause some people don’t like it) I always add a dash of pepper cause I like pepper too
Place skillet of frying pan on medium to large burner depending on the size of the pan. Cover and cook on a medium heat stirring occasionally. Cook veggies till they are warm and a little soft.

Place fish into a separate frying pan or skillet, preferable non stick as well. Cook on a low heat flipping once the once side is white. Cook until the fish is white all the way through. If your not sure just split one of the fillets open with the flipper and see.

Once the rice is done, the fish is cooked and the veggies are soft and warm you good to go
that’s literally it. The rice takes about 30 mins to cook so start that early. You can always start the rice before you chop the veggies cause even if the rice is done early you can just take it off the burner and leave the lid on and it will be warm enough to eat still. The fish and veggies take literally only about 15 minutes to cook.
This is a really easy and simple recipe, it seems harder than it is I assure you.
I usually serve it with a side salad or steamed veggie. Up to you which one, go with what ever is easiest and that you have on hand. If you don’t like rice then just skip that part and serve with buns or a fresh loaf of bread of some kind. Or hell don’t serve any bread or rice at all just have the fish and the veggies with a salad of some kind.
So there you have it, the low down on my regular shopping habits and a very easy very yummy healthy fish dish to try this summer.

ahhh what can I say I’m a good granddaughter who helps her grandma so she doesn’t hurt herself. Again like last year. Yah she kinda had a few boxes fall on her when she tried to do this last year and she broke her arm. SO this year she brought in reinforcements
